Cadireta represents pure Chardonnay the wine was fermented on the lees of viognier, where it definitely picked-up aromas of acacia and luscious fruit flavours.
Night harvest at the end of august. 12H pre ferment maceration on skins. Pressing, racking, yeasting and fermentation in Burgundian new barrels for 30% of the wine and 70% fermented in stainless still with temperature control at 13C. 8% of the final blend has completed Malolacticfermentation.
Tasting Note:
The ripe fruit flavour of Chardonnay -melon and banana- has the additional influence of Viognier which brings white flowers, peach and apricot. Combined with a little vanilla and spice from the barrels, this is a richly flavoured, but refreshingly crisp white of great character.
